Ingredients
- 2 cups packed, chopped, raw, fresh basil (or kale or parsley) (4 oz)
- ¼ - ⅓ cup walnuts (or pine nuts or sunflower kernels)
- ½ cup grated hard cheese such as Parmesan or Romano
- 3 cloves garlic
- ½ cup extra-virgin olive oil
- 2½ Tablespoons lemon juice
- ¾ teaspoon salt
- ¼ teaspoon ground black pepper
Directions
- Place chopped basil and walnuts in food processor and grind.
- Add and grind garlic and grated cheese.
- Add olive oil.
- Add salt, pepper, lemon juice (to taste).
- Pulse all ingredients in a food processor until smooth.
- Transfer pesto to small bowl, cover and chill until you are ready to serve.
